Scalpel-like sharpness Slicing Knife!
I've enjoyed using this 9.5" Miyabi Kaizen Slicing knife, for years. I recently used this knife and cuts effortless through a brisket corned beef. It is not by surprised that this knife is versatile, great for pile of vegetables and slicing through meats.
Don't forget, this is a VG10 super steel Japanese knife, it is sharp and has 65-layer Damascus flower design. This exquisite, hand-hammered effect helps prevent food from sticking. Hand-honed blade finished with a true katana edge and a CRYODUR blade, ice-hardened to Rockwell 60. The blade is balanced by a refined D-shaped handle made of black linen Micarta.

The Miyabi Kaizen 9.5 inch slicer is made in Japan and features a nice sharp angle, as well as VG10 steel which helps keep the edge nice and sharp. I did purchase a Japanese honing steel to help maintain the edge, because I was told the German honing steel I already have, is not hard enough to use on this knife. The new honing steel works well, and there has been no need to actually have the knife sharpened as of yet.
This slicer is perfect for thick and super thin slices. Easily glides through meat and raw fish with very little effort. Nice comfortable handle grip is an added bonus.

With this slicer you will achieve the thinnest slice of meat possible. True to its Japanese heritage, it has a very thin blade with scalpel-like sharpness. It is made from a very hard VG10 steel which has great hardness and will result in amazing edge retention. The D shaped handle fits pefectly in your hand and is made from Micarta. This is a linen and resin mixture that has the look and feel of wood with the durability of a synthetic material.
It's no surprise that Miyabi is made and sold in Japan as premium knives.

This elegant slicer is made with VG10 super steel, the results an amazingly sharp cutting edge. It shape of the blade is authentically Japanese and will glide through any meat you slice. The handle is a traditional Japanese D shape, made from black linen micarta, just beautiful.

Single Stroke
Kaizen's long slender blade allows you to make clean slices in a single stroke. Beautiful 65 layer Damascus pattern blade and micarta handle for comfort and control. Expertly carve turkey, ham, leg of lamb, and roasts with this slicing knife.

A slicing knife has a long thin blade that is a little more flexible than a carving knife and they are great to use for thin slices of roast, fruits, vegetable or even great for birthday cake! This Kaizen slicing knife is fun to pull out for those special occasions. It is made from VG10 super steel and has a 64 layer flower damascus pattern. i love the way this thin long blade just glides through everything,

A great slicer knife from Miyabi
I love the look of the blade and the flower Damascus pattern look of the 64 layers of the VG10 steel on this knife. The handle is nicely rounded, really feels nice with the Micarta wood handle. It has a really nice weight to it, and I can through anything with ease and smoothness, clean slices every time.
