The CRYODUR blades feature exceptional sharpness and durability thanks to their innovative, icehardening treatment. Then, artisans hand-hone the blades with the historic Honbazuke method. My new favorite knife
This 8" Miyabi Kaizen Chef's knife is by far the best knife I have purchased in a long time. It is perfectly balanced and fits my hand better then any other knife I own. Anytime I buy a knife I always sharpen it with my Lansky kit before I use it. The blade is still holding its edge and I've been using it for over a month now and at least 4 or 5 times a week. The 65 layer Damascus blade looks fantastic and is really a piece of art in my mind.

Knife cracked 13 mm into blade
The knife two years old. Cut a piece of salmon. The blade snapped and when I pulled the blade back from the cutting board there was a 13 mm crack in the blade. Poor quality. There is also dye or paint on the blade that were off. Don't like to think that it is tainting the food but it must be. DO NOT buy these knives.
