Rated 5 out of 5 by from An unique chef blade This is a really great Japanese Chef knife. I love the aesthetic of these Japanese knives and how beautiful the 64 layers of VG10 steel is on the blade. Even though the layers are pronounced in that beautiful flower Damascus design, it’s also more subtitled in comparison to the Miyabi Kaizen II blades.The Kaizen has a beautiful blade and the Micarta wood handle feels really smooth in hand, and has a nice roundedness to it. With the blade having 64 layers of steel, you can really feel how much of a difference that makes when slicing fruits and veggies. The wide chef knife is an unique blade shape for a chef; since it’s a smaller size than the 8” chef, with the wideness of this blade, it’s almost like you have the size of the 8” chef.

Rated 5 out of 5 by from Incredibly useful knife This is the knife to pull out when cutting through dense foods. Used this today to cut into a large wedge of Jarlsberg, and it made me consider how much I use it. Not just for chopping vegetables, but it sure shines in that arena. I also use it to chop meat, cube potatoes and carrots, cut a through a smaller head of cabbage. In addition to it's '101' uses, the Kaizen line is a beautifully crafted knife. Lifetime quality steel that is layered and etched to a gorgeous finish. Holds it's edge. Hone regularly for max enjoyment.

It provides great knuckle clearance while chopping vegetables and the broad blade can be used to scoop and transfer food from the cutting board to the cooking vessel. Miyabi Kaizen knives are made with a core of VG10 steel with 64 additional layers to create a beautiful damascus pattern. The core is 60 on the hardness scale so the fine edge remains razor sharp use after use.

The curve in the blade makes the rocking motion easy plus has lots of surface space for scooping cut food off the cutting board and into the pan or bowl. Impeccable cutting tool made from VG10 steel with 64 layers of Damascus surrounding the core. Each of these knives is a unique piece of art showing off the excellent Japanese craftsmanship at Miyabi.

Rated 5 out of 5 by from Miyabi Kaizen is a beautiful series that is made with Damascus steel - 65 layers in a flower pattern that stays super-sharp, durable and will not chip or rust! The extra-wide blade on this 6" Chef's knife comes in handy when chopping up a large amount of veggies or you can transport the veggies to the pan or pot. The black linen Micarta handle looks like wood, and gives a good grip and comfort.

Rated 5 out of 5 by from unique style Finally a Japanese chefs knife with larger hands in mind. The extra wide blade gives me extra knuckle clearance for my fingers. The handle is lightweight and comfortable to hold. The super sharp blade is layered in a beautiful Damascus style pattern. The hard steel makes a strong sharp blade that is easy to maintain. The slim profile and acute angle give accurate straight cuts every time.

Rated 4 out of 5 by from The Kaizen 6" wide chefs knife has a core of VG10 super steel and is protected by 64 layers of additional steel. It is also ice hardened so the knife stays sharper for a longer period of time. The knife can do any job in the kitchen. Due to the width of the blade it can even be used as a scrapper - remember to turn it over so the blade does not get damaged.
