Then, artisans hand-hone the blades with the historic Honbazuke method. This attention to detail translates into precision cutting for MIYABI Kaizen users.The blade is balanced by a refined D-shaped handle made of black linen Micarta. Rated 5 out of 5 by from My prep knife, utility knife too! This Kaizen 4.5" Paring & Utility knife is comfortable in my hand, either too small or too large. this size is my prep knife too. The round handle feels like D-shape is enjoyable. It is great to cut medium size food, great for cutting and slicing meat, fruits like cantaloupe, and vegetables. This is a go-to knife for me because I like how I it feels great in my hand and cutting edge is exceptional. Kaizen is VG10 super steel, a golden standard for Miyabi knife, an authentic thin Japanese blade profile, blade, ice-hardened to Rockwell 60 with 65-layer flower Damascus design preventing food from sticking and with katana edge.

Rated 5 out of 5 by from A great utility knife This is a really great Japanese Paring/Utility knife. I love the aesthetic of these Japanese knives and how beautiful the 64 layers of VG10 steel is on the blade. Even though the layers are pronounced in that beautiful flower Damascus design, it’s also more subtitled in comparison to the Miyabi Kaizen II blades.The Kaizen has a beautiful blade and the Micarta wood handle feels really smooth in hand, and has a nice roundedness to it. With the blade having 64 layers of steel, you can really feel how much of a difference that makes when peeling or slicing fruits and veggies. A great paring knife to have in the kitchen.

Rated 5 out of 5 by from The Miyabi Kaizen paring knives are both elegant to use and beautiful to look at. The slim D-shaped handle tucks into the fingers confidently. The blade is both hard and light at the same time, making it glide through delicate fruits and hearty peels effortlessly. That's because the 64 layers of molten steel applied over the VG10 steel core hold a tight edge. Less work for more precise cuts. Adding to the enjoyment of this phenomenal cutting tool is its beauty. The Damascus-style polishing showing the layers and the linen Micarta handle with finishing details combine to make using and owning this knife a joy.

Rated 4 out of 5 by from My daughter loves this prep knife. She is not yet comfortable with an 8" chef so this is one of her go to knives. The blade has a core of VG10 super steel and is protected by 64 layers of additional steel so extremely durable and razor sharp. It is also ice hardened so the knife stays sharper for a longer period of time. She uses it as a chefs knife and can do any job with it.

Rated 5 out of 5 by from Super Sharp This paring knife is made from a VG10 steel core and honed to an razor sharp 9 to 12 degree angle. Because of the quality of the steel it will retain that sharp edge use after use. The handle is slightly longer than some paring knives so you will get a nice secure grip. The Micarta handle has an authentic wood look without the downfalls of wood such as swelling and cracking.

Rated 5 out of 5 by from great shape paring knife This is a very good paring knife. The slim D shaped handle is comfortable to hold while working in hand. The Micarta handle is very light. The blade is very sharp. The Super Steel construction stays sharp for a very long time and is easy to maintain. The Damascus style pattern is very unique and shows the Japanese craftsmanship and artistry put into this knife.

This incredible sharpness means this little knife can handle everything from oranges and apples, small vegetables or even meats and cheeses. The handle is a durable "wood like" material that can withstand moisture and day-to-day wear and tear.

Kaizen knives are impeccable cutting tools made from VG10 steel with 64 layers of Damascus surrounding the core. Each knife is a unique piece of art showing off the excellent Japanese craftsmanship at Miyabi.
