Then, artisans hand-hone the blades with the historic Honbazuke method. This attention to detail translates into precision cutting for MIYABI Kaizen users.The blade is balanced by a refined D-shaped handle made of black linen Micarta. With a wood-like texture, the comfortable handle won't slip from your hand and acts as a moisture repellant. Handcrafted in Seki, Japan.

The core is made from VG10 super steel which is 60 on the hardness scale meaning it is capable of retaining the razor sharp edge use after use. No worries about chips or cracking because they go through a patented ice hardening process that brings out the full hardness of the steel while giving it maximum flexibility. With 64 additional layers of steel to create the damascus pattern this knife is extremely beautiful. This paring knife is a great size and the handle to blade ratio is perfect for a comfortable grip even though the blade is short and sharp for jobs such as peeling, mincing or dicing.

I love the aesthetic of these Japanese knives and how beautiful the 64 layers of VG10 steel is on the blade. Even though the layers are pronounced in that beautiful flower Damascus design, it’s also more subtitled in comparison to the Miyabi Kaizen II blades.The Kaizen has a beautiful blade and the Micarta wood handle feels really smooth in hand, and has a nice roundedness to it. With the blade having 64 layers of steel, you can really feel how much of a difference that makes when peeling fruits and veggies.

Rated 5 out of 5 by from Razor Sharp Incredibly beautiful damascus blade with a razor sharp edge. A little different blade shape than traditional German parers; the flat blade is perfect for chopping small herbs, garlic and ginger. The handle is a traditional D shape and is very comfortable but extremely durable as well. It's made from a linen and resin mixture that feels and looks like wood but has the durability of a synthetic material.

This straight paring knife, like all Kaizen paring knives, is both elegant to use and beautiful to look at. The slim D-shaped handle tucks into the fingers confidently. The blade is both hard and light at the same time, making it glide through delicate fruits and hearty peels effortlessly. That's because the 64 layers of molten steel applied over the VG10 steel core hold a tight edge. Less work for more precise cuts. Adding to the enjoyment of this phenomenal cutting tool is its beauty. The Damascus-style polishing showing the layers and, the linen Micarta handle with finishing details combine to make using and owning this knife a joy. Hone regularly. Hand wash. This knife will be sharp and beautiful for a lifetime.

One of the most used knives in the kitchen, well my kitchen for sure, this one is so sharp and easy to use due to the traditional D-shaped handle. The handle is made of linen micarta which although not water proof, is water resistant, so moisture will not be a problem. Which is great when peeling juicy fruits!

The blade has a core of VG10 super steel and is protected by 64 layers of additional steel and it is also ice hardened so the knife stays sharper for a longer period of time. Handle is a rounded D shape that is comfortable even when doing detailed work.

These thin blade Japanese knives are made with the Cryodur process that keeps blades sharp and durable and also chip and corrosion free. The Damascus blades have a 65 layer flower pattern that is exquisite! With the black linen Micarta handle, that looks and feels like wood, it offers a great grip and comfort while cutting.
