Rated 5 out of 5 by from Great Fusion Santoku! I've enjoyed performance of every Miyabi Fusion, for years. Fusion is just about any other VG10 Japanese knife super steel Japanese knife for a scalpel-like steel sharpness. However this Miyabi Fusion handle is different from most of them. I liked the curved on the handle, comfortable feel and the grip is outstanding. It is not by surprised that this Santoku knife is versatile, great for a pile of vegetables chopping and cutting fruits and vegetables. I recently used the 10" knife I've had and cuts effortless through a brisket corned beef. 65-layer Damascus flower design is exquisite, hand-hammered effect helps prevent food from sticking. Hand-honed blade finished with a true katana edge and a CRYODUR blade, ice-hardened to Rockwell 60.

Rated 5 out of 5 by from One of the best al around knives in the kitchen The santoku is my go to knife. It is ideal for a vegetable-centric menu - the wider blades with the hollow edge make simple work of slicing and dicing vegetables. The grooves along the blade reduce friction, allowing food to fall away more easily. The blade itself is comprised of layers of premium stainless steel around a VG10 super steel core, in effect some of the best steel for knife making. Steel that is made tough enough to meet a demanding chef’s standards – it is chip resistant and durable – while at the same time effortlessly slicing through all foods with a clean, exact cuts. And as good as this knife is for vegetables, it is equally good for meats, poultry, seafood. This line was created by world renowned Iron Chef Masaharu Morimoto. Striving for Japanese perfection, and applying German precision, the Morimoto Fusion family of knives represents the best of both worlds. And the knives are beautiful. The Damascus finish draws attention to the 65-layers that make this knife what it is – world class. Hand washing is highly recommended to keep this knife, and all knives, performing and looking their absolute best.

Rated 4 out of 5 by from Morimoto is a blend of eastern and western styles of cutlery. The appearance, edge angle and blade profile provide the look and efficiency of Eastern cutlery. The ambidextrous 3 rivet handle and the forgiving steel bring the Western advantage. The steel can be easily honed to sharpness and is very nick and chip resistant, literally bending before breaking if it runs into something too hard.

Rated 4 out of 5 by from Zwilling Employee The Miyabi Fusion Morimoto line has an asian inspired western handle, comfortable for both the right and left handed. The beautiful Damascus layered Steel used in the blade is forgiving like a german knife, resistant to knicks and chips on the cutting edge. Easily sharpened back to its sharp edge, it still has the feel and angle of an Asian knife.
