Rated 5 out of 5 by from New and exciting I had never heard of let alone used a Nakiri, but when I saw it i was intrigued. I use it much like I use my santoku but it's so much more fun and and the motion to use it is really fun to watch. I tend to chop back and down motion with this rather than the down and forward I use with my santoku. It has a great flat surface so you can use it to chop but it also has the ability to rock a bit as well. It's a beautiful profile and of course the handle with the red glass beading is absolutely my favorite, for looks and for comfort.

Rated 5 out of 5 by from Perfect Gift for Knife Lovers I bought this knife for two of my sons for Christmas. Both love to cook and one works in a restaurant. They love it and use it every day. The Nakiri is such a great blade shape and with it's scalpel-like edge, it can make light work of any chopping task. Prior to this gift, I had never given them a Japanese knife because I was worried they would chip the blade. But Evolution is made of FC61 steel which is very durable and chip resistant.

Rated 5 out of 5 by from The Nakiri is quickly becoming one of my favorite knives to use in the kitchen due to the versatility of the blade profile. You can use the santoku on meat, poultry and vegetables, but it really shines when chopping vegetables and will find that it is easy work with the three-rivet handle which fits perfectly in the hand. This knife is sharp and will retain it sharpness due to the FC61 steel and the special ice-hardening process

Rated 5 out of 5 by from The best knife you've never heard of I had not heard of a nakiri knife until recently and I don't know what I did before I got this great knife! I cook vegetarian a lot and this knife is great to get through all the vegetables that I cut up every night. I also love the wide blade that makes it easy for me to transfer the vegetables from the cutting board to the pan with ease. The handle is super comfortable and the knife is very sharp.

This handle is very much a German style handle which is why I love this knife. It is a good mixture of the sharpness of a Japanese knife and the handle of a German knife. There is no doubt this will be a purchase you will love.

Rated 5 out of 5 by from Love the Evolution I have other knives in this line, the Evolution. The blade is super sharp as you would expect with a Japanese knife. But I like ever so slightly curved 3 rivet handle. It is very comfortable. I like to think of this as a hybrid between a German and Japanese knife. I added the nakiri, not sue if I would like it, but it has not disappointed. Great chopper.

This blade has a nice lighter weight to it, but is very sharp. This is a great Nakiri knife that merges the western and Asian styles together, making it a much more durable Japanese knife, great for chopping and slicing.
