Handcrafted in Seki, Japan, MIYABI Evolution merges German engineering expertise with Japanese craftsmanship for the utmost control and accuracy in every cut. This finely crafted nakiri knife mimics a Japanese cleaver shape and features a wide, ultra-sharp blade that’s ideal for prepping everything from veggies to meat to fish. It’s a sturdy knife created for just about everything in the kitchen, but most especially for chopping, slicing, and dicing vegetables.

Crafted from superior quality fine carbide steel that is often used in razor blades, the knives offer the signature sharpness for which Japanese knives are known. A sophisticated six-step ice hardening technique unlocks the steel’s full potential guaranteeing these FRIODURx2® blades boast remarkable initial sharpness, cutting edge retention, corrosion resistance, and chip-resistant toughness.

Beautifully polished to a mirror finish, the blades have a katana edge reminiscent of the samurai swords forged in the same town centuries ago. Curved for comfort and thicker at the end to prevent slipping, the triple-rivet handles encourage fatigue-free cutting. A rounded spine, heel, and bolster, plus nine hand-finishing steps ensure these handles have unsurpassed ergonomics.

Rated 5 out of 5 by from New and exciting I had never heard of let alone used a Nakiri, but when I saw it i was intrigued. I use it much like I use my santoku but it's so much more fun and and the motion to use it is really fun to watch. I tend to chop back and down motion with this rather than the down and forward I use with my santoku. It has a great flat surface so you can use it to chop but it also has the ability to rock a bit as well. It's a beautiful profile and of course the handle with the red glass beading is absolutely my favorite, for looks and for comfort.

Rated 5 out of 5 by from Great Find Ive been looking at Nakiris for a while but havent been able to find the one that was just right. I love that this has a traditional western style handle. Way more comfortable for me than the rounded ones. The steel is very high quality but also light. The Japanese craftsmanship is evident throughout. I love the little touches like the watermarking along the edge just like a traditional Katana blade. The thinness of the blade gives great slices and stays sharp for such a long time.

For some reason, I especially love that it has a little more weight to it than my other knives. I think I plan on treating myself to Miyabi knife at least once a year until my collections complete!

Rated 5 out of 5 by from Perfect knife for almost everything! Life-changing I do a LOT of cooking for my family of five. I’ve never invested in a proper knife set. I had been using some cheap set from Costco that was like $40! Well, it was time… I do a lot of chopping so I researched different brands and types of knives and decided a nakiri knife would be the best option to start with. I ordered it off Amazon, and let me tell you, this knife is life-changing!! I don’t know how I’ve gone this long without it! (I’m 50). I couldn’t believe how easy and fast it was to chop herbs! Slicing carrots was like cutting through butter! No effort required! I’m so motivated to cook now, and I may order a paring knife and bread knife from the same line (Evolution). My only complaint is that it doesn’t come with a sheath to protect it in my kitchen drawer.

The Nakiri is a classic Japanese knife shape, and it is ground to a razor thin blade, making it a pleasure to slice though vegetables. This knife deviates from its classic roots with its handle, the riveted contoured grip takes inspiration from Western-style knives, but that change, makes all the difference for staving off fatigue during long periods of prep work.

Rated 5 out of 5 by from Perfect Gift for Knife Lovers I bought this knife for two of my sons for Christmas. Both love to cook and one works in a restaurant. They love it and use it every day. The Nakiri is such a great blade shape and with it's scalpel-like edge, it can make light work of any chopping task. Prior to this gift, I had never given them a Japanese knife because I was worried they would chip the blade. But Evolution is made of FC61 steel which is very durable and chip resistant.
