I have a prep knife myself and it is scalpel-like sharpness and comfortably in the hand. ime-tested German engineering meets Japanese craftsmanship.

Rated 5 out of 5 by from Love the Evolution I have other knives in this line, the Evolution. The blade is super sharp as you would expect with a Japanese knife. But I like ever so slightly curved 3 rivet handle. It is very comfortable. I like to think of this as a hybrid between a German and Japanese knife. I added the nakiri, not sue if I would like it, but it has not disappointed. Great chopper.

This blade has a nice lighter weight to it, but is very sharp. This is a great Nakiri knife that merges the western and Asian styles together, making it a much more durable Japanese knife, great for chopping and slicing.

Rated 5 out of 5 by from Quick, fast knife. This Evolution line is my favorite, everyday, knife from Miyabi. It's super sharp and feels amazing in my hand. I like using the Nakiri for vegetable chopping and slicing. the blade goes the full length of the knife which gives balance and stability.

Rated 5 out of 5 by from Meet Nakiri Excellent knife for chopping vegetables. Somewhat of a smaller version of the Chinese Cleaver, the nakiri has a less broad blade. The symmetrical handle and well rounded heel at back of blade providie effortless chopping.
