The Miyabi Black 5000MCD is a true work of art. The blade is constructed of micro-carbide powdered MC66 steel, which is ice-hardened to an impressive 66 HRC. This results in an exceptionally sharp and lasting edge. The blade is wrapped in 132 additional layers of steel, resulting in a beautiful flower damascus pattern.The handle of the Miyabi Black series is made from unique wood, black ash. The grain and color of the black ash contrasts with the damascus of the blade. The handle is crafted in a traditional "D" shape, providing optimal ergonomics for fatigue-free cutting in the kitchen.Handcrafted in Seki, Japan.

Rated 5 out of 5 by from It doesn't get any better than Miyabi Black and what a treat to have a slicing knife from this beautiful collection. A slicing knife needs to be razor sharp so that you can effortlessly cut through different roasts and cuts of meat. Miyabi Black is going to be one of the sharpest knives you will ever use because of the MC66 steel core which due to its hardness can retain it's razor sharp edge much longer than traditional steel. Wrapped in an additional 132 layers of steel to create a detailed floral damascus pattern it has a traditional D shaped handle made from black ash. This is truly an exquisite knife.

Rated 5 out of 5 by from If you get one Miyabi Black get this one Miyabi Black knives are sleek, elegant, hand-made and incredibly hard. They are the hardest knives we make, 66 on the Rockwell scale. The dual beveled blade edges are sharpened to a slight 10 to 12 degrees on each side. All this means is they will slice so smoothly it will bring a smile to your face each time you use one. All this makes for an incredible slicing knife - use it for sashimi. It will amaze. Plus these knives are also gorgeous. The Damascus pattern on the 133-layer blades complements the beautiful Japanese Black Ash handles. No two are alike. These knives take a little maintenance to keep the wood handles smooth and beautiful. Enjoy and care for these knives for a lifetime.

This slices through meats, fish, vegetable, fruits and bread effortless. Blade is constructed of micro-carbide powdered MC66 steel, which is ice-hardened to an impressive 66 HRC. A knife that changes how knife should be used on a daily basis. Thi is a true work of art, a knife is so sharp and fancy however it is so versatile you'll enjoy its performance and functionality. Blade consists of 133 layers of steel, resulting in a floral Damascus pattern creates barrier between food and steel. This exquisite, hand-hammered effect helps prevent food from sticking. Maple wood handle shows uniqueness in every pieces. It is so sharp and saves you time sharpening your knife because it stays sharp, honed it once in a while.

Rated 5 out of 5 by from A beautiful slicer What a beautiful slicer. I love how sharp this blade is, it slices anything like it’s butter. With the 133 layers of MC66 steel, you get an exceptionally sharp knife, while also having a durable blade thanks to it being ice hardened. This is a great blade for getting thin, close cuts on meat, fish; and since it’s a long blade, you can have minimal amounts of slices instead of using a smaller blade which would require more slices or cuts.

The blade is gorgeous with 133 layers and an edge that can cut the thinnest slices imaginable yet feels light in the hand and has a perfect balance. The Black Ash handle is not only stunning but feels great in both a right handed as well as a left handed cook.

Perfect choice for the finest cuts of fish for sushi making or for slicing pristine cuts from a large roast. As you would expect, the attention to detail is second to none and the performance is exemplary.
