The potent core of SG2 micro-carbide powder steel is layered in a stunning Tsuchime finish. This exquisite, hand-hammered effect helps prevent food from sticking. The CRYODUR® blades feature exceptional sharpness and durability thanks to their innovative, ice-hardening treatment. Each knife features a hand-honed blade finished with a true katana edge, a homage to the samurai swords made in Seki centuries ago.

Crafted with special Cocobolo Rosewood Pakkawood, the handles mirror the beauty of the blade. Sophisticated details include brass and red spacers, a mosaic pin and a stainless-steel end cap. The attractive D-shaped handle is designed to nestle comfortably in your hand for tireless cutting.

This utility knife becomes my daily steak knife, for its sharpness and narrow blade is comfortable to use for. It's my go-to utility knife prepping food in my kitchen, blades deliver scalpel-like sharpness. Its potent core of SG2 micro-carbide powder steel is layered in a Tsuchime finish. CRYODUR blade, ice-hardened to Rockwell 63 Handle.The D shape handle and it is fabricated with special Cocobolo Rosewood pakkawood, it is so comfortable in your hand my family enjoy using this knife.

It is good for working with smaller cuts of meats and poultry, and will easy cut through vegetables and fruits. The beauty and craftsmanship of the Miyabi Artisan collection is awe-inspiring. They are hand crafted in Seki, Japan, made of a micro-carbide SG2 steel - translated: they are made with the utmost attention to detail, and the quality of the steel means the knife will stay sharp and beautiful for years and years t come. Minimal maintenance required: hand wash and dry and hone regularly.

Rated 5 out of 5 by from great prep knife This is a great knife. It fits that niche between my paring knife and chefs knife. I use it for most of my fruit and vegetable prep. The Pakkawood handle is very comfortable to hold and use both on the cutting board and in hand. The blade is very sharp and has an acute angle giving thin accurate cuts. The knife is also great to look at. The mosaic pin and gold and red accents in the handle really stand out. The hammered and sand blasted blade are very unique. The Japanese craftsmanship and artistry are evident throughout this knife.

The hammered Tsuchime finish really makes such a big difference when chopping or slicing produce or starchy foods like potatoes and not sticking to the knife. I like how this is such a sharp blade thanks to the ice hardening aspect. The Cocobolo wood D-Shaped handle fits perfectly in my hand and makes for a comfort experience as I chop and cut produce. The knife is sharp and durable, what more can you want in an Utility knife!

The hand hammering on the blade is really stunning and makes food fall off the blade easily. D shaped handle feels smooth and secure and balanced in either the left or the right hand. Keeps its sharp edge for many uses with proper handling and occasional sharpening.

The hammered blade makes the food not stick and gives you both sharpness and durability. The pakkawood handle is beautfiul, comfortable and easy to grip.
