Rated 5 out of 5 by from Every day use will not only dull blades but they will also get out of straight edge alignment. After a little practice learning to use a sharpening steel will be one of the best things you've ever done because you will realize how simple it is to keep your knives their sharpest and their performance will impress you every time. This steel is great because it is hard enough to sharpen my Japanese knives as well as my German knives.

This will do the job but if you want to be really impressed, try the ceramic or even better the tungsten steel rods, worth the upgrade in price to keep your Japanese knife in tip top shape.
