Rated 5 out of 5 by from The 6" chef is an ideal size for smaller fruits and vegetables, but also can be a go-to knife for someone who feels an 8" blade is just too much. It is the preferred size for both my mom and sister. I love the handle design and construction of German knives with their curves that fit perfectly in the palm of my hand and the solid three rivet construction. But I also love the incredible sharpness and beauty of a Japanese knife. This is the perfect combination for the parer making peeling or mincing a simple task. The new type of steel used is very chip resistant; a key feature to maintaining the thin, sharp blade.

Rated 5 out of 5 by from multi functional Hibana means "spark"- The sparks that fly off the steel when the knives are forged! This gyutos blade is excellent for slicing meats, fish, poultry and vegetables. The shape of the blade is great for forward slicing as well as rocking. The Hibana collection is a high end Japanese steel that is as beautiful to look at as it to use. This is a high performance, super sharp and durable blade. The handle is classic three rivet and extrermly comfortable to hold.

Rated 5 out of 5 by from This knife is perfect for all jobs in the kitchen and if you have someone not comfortable with an 8" chef's knife this is perfect. This knife has a core of FC61 carbide steel and is surrounded by an additional 48 layers of stainless steel creating a beautiful Damascus pattern. Not only beautiful but durable and tough. The blade is sharpened using a 3 step Honbazuke process which creates a razor shape edge, capable of cutting through anything.

Longer and wider than a prep knife this can still do the small work such as mincing and dicing but can also take on bigger items like acorn squash, leeks and onions. Habana means “spark” in Japanese and is an apt description of the gorgeous Damascus pattern on these blades. Made by Miyabi in Seki with a core of FC61 steel surrounded by 48 layers of softer steels, each blade has been hand crafted by 46 Japanese artisans. FC 61 is a steel commonly used in razor blades because of its superior cutting edge retention and durability. Able to achieve an acute angle edge that is easy to maintain and re-sharpen without chipping or corrosion. The chic looking POM handle, round spine and curved bolster make this an extremely ergonomic and comfortable knife to hold and use for long periods of time.

The 49 layers of damascus patterned FC61 steel makes such a statement not only aesthetically but also when you are using it, the knife is so smooth and effortless when slicing and chopping foods. Great for all types of uses. I like the handle on this knife, contours nicely, and it also has a curved bolster, creating a comfortable grip while holding this knife.

I love the way it feels, the sharpness and thin blade cuts with ease and thin knife cuts are a breeze. Love love love.

Rated 5 out of 5 by from Everyday knife We love this knife. I didn't even know how dull my other knives were until I started using this. Now this is the only knife I use! Beautiful design and very comfortable to use. Just make sure to wash and dry immediately or else it will rust.
