Rated 5 out of 5 by from Perfect for smaller fruits and vegetables; also works great with herbs or slicing meats and cheese. I love the handle design and construction of German knives with their curves that fit perfectly in the palm of my hand and the solid three rivet construction. But I also love the incredible sharpness and beauty of a Japanese knife. This is the perfect combination for the parer making peeling or mincing a simple task. The new type of steel used is very chip resistant; a key feature to maintaining the thin, sharp blade.

Rated 5 out of 5 by from fabulous knife Hibana means "spark"- The sparks that fly off the steel when the knives are forged! This 5.5" knife is excellent for slicing and dicing medium sized fruits,vegetables and meats. The Hibana collection is a high end Japanese steel that is as beautiful to look at as it to use. The Damascus steel pattern is hammered to represent the image of sparks in its layers. This is a high performance, super sharp and durable blade. The handle is classic three rivet and extrermly comfortable to hold.

Rated 5 out of 5 by from Great prep knife! This is a great Japanese prep knife. I really like the feel of the handle on this blade, it’s very comfortable and contours nicely. This blade has a nice lighter weight to it, but is very sharp. This is a great knife if you don’t want a blade too large in size, but can still chop and slice like it’s a Chef knife. The spark damascus design of the 49 layers of steel is beautiful, definitely a statement knife in your kitchen.

Rated 5 out of 5 by from The shape and size of this knife makes it a great addition to your knife collection. The prep knife can take on all those small projects such as mincing garlic, herbs and shallots. It also works great on small citrus and apples. Has a nice amount of knuckle clearance for maximum cutting performance. Habana means “spark” in Japanese and is an apt description of the gorgeous Damascus pattern on these blades. Made by Miyabi in Seki with a core of FC61 steel surrounded by 48 layers of softer steels, each blade has been hand crafted by 46 Japanese artisans. FC 61 is a steel commonly used in razor blades because of its superior cutting edge retention and durability. Able to achieve an acute angle edge that is easy to maintain and re-sharpen without chipping or corrosion. The chic looking POM handle, round spine and curved bolster make this an extremely ergonomic and comfortable knife to hold and use for long periods of time.

Rated 5 out of 5 by from Japanese Prep Knife Hibana, Japanese for spark, presented in a striking prep knife. This beautiful 49 layer damascus patterned blade is a great in between size. It performs much like a longer paring knife for small cuts, as well as medium-size task. The contoured handle and curved bolster promoting a pinch grip provide added control of precision cutting.

Rated 5 out of 5 by from My daughter uses prep knives as her go to knives, she especially likes this one. She is just learning knife skills and is most comfortable with this style of knife. It is also easy to use with the pinch grip technique. The blade is sharpened using a Japanese 3 step Honbazuke process which creates a razor shape edge.

The shape offers a little more width so easy to use on a cutting board without your knuckles hitting the board. The damascus detail is unique to each blade. Super sharp and durable!

I’ve used the 8” Myabi knife for over a year and after “test-driving” my new 5.5” knife, can see this will become the one I grab for routine prep work. It’s so sharp, it is like cutting through butter.
