Rated 5 out of 5 by from Ultimate steak knife Beautiful to look at with it's incredible Damascus design, but extremely sharp and durable. True to its Japanese original, it has a razor sharp edge that will slice cleanly through any meat. The blade core is FC61 which is extremely chip resistant and durable; a feature not found on all of your Japanese knives. The handle is a great blend of German and Japanese knives making it extremely comfortable and durable, as well as resistant to water damage.
