The innovative hollow edge divets will keep food out of your way by guiding it up and off of the knife. The Classic handles are pretty comfortable too so if you're in it for the long haul, you won't have to worry about your hand getting tired.

It isn't made in China, instead it is made in Spain, so I felt better about purchasing it. Will definitely get more of these as gifts in the future!

The Santoku is one of my choice blade styles because one kife can accomplish so many tasks. The hallowed out sections on the knife keep whatevery you are slicing, dicing, or cutting, off of your knife. That means no sticking and veggies stay on the cutting board and not your knife.

The classic santoku is a great addition to any set; it chops perfectly and the little dimples help sticky foods release from the blade.

The santoku is great for jobs like mincing and chopping and the hollow edge divets help to guide food up and off of the blade while cutting. I really like the weight of the Classic knives and the handles make it extra comfortable.

I have 2 Henckels classic knives which have cracked black handles. How do I get them repaired? They are many years old.

Is this knife made with the steel alloy X 50 CR MO V-15 ? I bought a 5 inch Henckels santoku several years ago, model number 31170-140, and it was marked with that alloy. This model (31170-141) does not appear to be marked with any alloy number.

What's the right way to sharpen this knife? With a 15 degree or 20 degree sharpener?

Santoku knives, as well as other Asian blade styles, should be sharpened at 10-12 degrees per side.

I hav a santoku classic knife I have used for years, but the handle is cracked at the site where the blade meets the handle. Would it be possible for me to get a replacement?
