J.A. Henckels International CLASSIC 5-inch Hollow Edge Santoku Knife is rated 4.5 out of 5 by 36.
Rated 5 out of 5 by from Doesn't feel like a value knife This little santoku could be your go-to for smaller fruits and veggies. With its 5" blade, it's easier to handle and the "dimples" help keep food from thinking to the blade. I have several family members that this is the main knife they use because an 8" chef is simply too big. Classic knives are as close as you can get to the knives made in Germany, at a more affordable price. They are forged from German steel and are made in Spain. The three rivet handle means they're perfectly weight, balanced and extremely durable. Guaranteed to last a lifetime!

Rated 5 out of 5 by from This knife makes it easy to cut anything This is a great knife for the price! I love how it has the ovals on the sides so that the food doesn't stick and I don't get a bunch of vegetables falling off the blade all at the same time. I love how this knife is made in Spain, unlike most of the other knives in this price range that come from China. The handle is such a beautiful classic look and I would recommend this knife to anyone!

Rated 4 out of 5 by from Classic is great quality at a great price Henckels Classic knives are made in Spain so they have a great price point but you still get all the highlights of specially formulated German Steel, forged bolster and balanced handle. These knives will retain their sharp edge longer, resist corrosion and stay chip and crack free. The hollow pockets on the edge of this chopping Santoku help keep the food from sticking as you slice.

Rated 5 out of 5 by from Kitchen Essential I use this knife for so many tasks in the kitchen but especially when I need to chop, slice or dice. The Santoku is one of my choice blade styles because one kife can accomplish so many tasks. The hallowed out sections on the knife keep whatevery you are slicing, dicing, or cutting, off of your knife. That means no sticking and veggies stay on the cutting board and not your knife.

Rated 4 out of 5 by from Iam new to specialty knives but this one feels like it will be a staple in my kitchen. love the flat cutting edge, It gives me plenty of contact with the cutting board. The little hollow outs help release potatoes, cucumbers and other moist food that usually sticks to the blade after slicing. I would recommend this new style knife to anyone that does a lot of vegetable cutting!

Rated 5 out of 5 by from If you like working with santoku knives, this smaller forged blade is perfect for chopping and mincing smaller foods. The innovative hollow edge divets will keep food out of your way by guiding it up and off of the knife. The Classic handles are pretty comfortable too so if you're in it for the long haul, you won't have to worry about your hand getting tired.

Is this knife made with the steel alloy X 50 CR MO V-15 ? I bought a 5 inch Henckels santoku several years ago, model number 31170-140, and it was marked with that alloy. This model (31170-141) does not appear to be marked with any alloy number.

Asked by: PhilD
Yes, all our Classic knives are made with the X 50 CR MO V-15 steel alloy.

What's the right way to sharpen this knife? With a 15 degree or 20 degree sharpener?

Asked by: Fernborough
Santoku knives, as well as other Asian blade styles, should be sharpened at 10-12 degrees per side.
