Taught my mother something newI purchased this product for on my own nefarious purpose of making Asian style chicken soup. The bones are a huge part of the soup and I was destroying my conventional knives to cut a whole chicken. When my gave it a try, she became a true believer of high quality brand name products by Henckels. She had been using standard-issue asian made cleavers, which will last a lifetime, sharpen with little issues, and get the job done. But after giving this cleaver a whirl, was thoroughly impressed with the fact that she did not have to use as much muscle and the blade never dulled. If this isn't a worthy testimonial, I don't know what is. I mean, she's my mom, she can cook!

First, I love the size of this cleaver, it fits perfectly in my hand and feel comfortable when I am using. Some larger cleavers, do not feel Iike I have good control of the knife, but this size does. Second, this is a tremendous value on the knife due to the German steel, made in Spain and ice-hardeing process. The three together create a durable and super sharp knife, that will retain its sharpness for a longer time than most other knives.

I really liked this cleaver and does a great job on Chicken bones. It is heavy enough to do most of the work for you but not too heavy to lift. It's much more satisfying to take apart a chicken yourself instead of buying a fryer cut up,. The meat justs taste fresher and you have a little more control on size of the pieces. This cleaver does what it needs too. My husband uses it on ribs as well and has no complaints!

Nicely weighted cleaverGood cleaver for chopping and breaking down whole chickens, raw and cooked, pork and lamb bones at home. Very useful tool.
I really like my Henckels Classic knives. I've had mine for 20 years. These knives are forged of quality steel with a full tang and a triple riveted handle, and a comfortable integrated bolster. Even if they aren't made in Germany, the steel is, and their quality is unquestionable.

Exceptional ValueYou can't go wrong with this Classic meat cleaver. It's heavy enough to chop through any bones but light enough that I can use it for large, hard vegetables. I have other knives in the Classic line and they are such an exceptional value. It's as close as you can get to the knives made in Germany (made in Spain) at a fraction of the cost. They are definitely built to last a lifetime.

Underrated KnifeI love using this cleaver for getting through bones in meat. I do wish it was a little heavier so that I could get the knife would do some of the work for me, but I did not have the budget to get the one that has some heft to it. Even with that said, I think this is a great knife that I would recommend to anyone who would like to try to butcher more meat at home.
This cleaver is sharpened to 15° on each side.

What am i supposed to use to sharpen this? Is the sharpening steel ok? or should i be using the stone?

A sharpening steel is great for every few times you use the knife. This realigns the blade and does not remove an material. When the blade is dull and needs to be resharpened, you can use a waterstone, pull-through sharpener, or utilize our sharpening service.
