can i use metal utensil on this pan? what is the standard of exterior stainless. is it 18/0? what is the 18/0 meaning? is there any nico which is the harmful chemical in the exterior?

18/10 refers to the amount of Chromium and Nickel in stainless steel alloy. In this case, the steel has 18% Chromium and 10% Nickel (this is a very common formulation for steel designed for use with food). These two metals in the steel alloy are what make it "stainless," they prevent rust and corrosion. The cooking surface of the John Pawson series of cookware is 18/10 that is treated with Silvinox. Silvinox is not a coating in itself, but it it a proprietary process that removes some of the iron and impurities from the stainless steel surface, leaving a layer of steel that sticks less and is more resistant to corrosion.
