INGREDIENTS

1 lbs sweet potatoes
1 onion
1 clove garlic
8 eggs
¾ cup whole milk
½ tsp salt
½ tsp pepper
3 tbsp sunflower oil
1.75 oz. bacon, diced
¼ lb baby spinach
1 pinch ground nutmeg
½ tsp baking soda
¼ lb feta cheese, crumbled
 

HOW TO MAKE IT

  1. Preheat oven to 350°F. Peel sweet potatoes and slice thinly – using a mandoline if you have one. Finely dice onion and garlic. Set aside.
  2. Add eggs, milk, salt and pepper to a large bowl. Whisk to combine. 
  3. Heat sunflower oil in a large frying pan. Sauté onion, bacon, and garlic until onion is translucent – around 5-7 minutes. Add spinach, season with nutmeg, and sauté until spinach is wilted. 
  4. Grease the baking dish, then line the bottom and sides with overlapping slices of sweet potato. Add spinach filling. Pour egg mixture on top. Sprinkle with feta cheese. Bake for approximately 25 min.  – until egg mixture is just set and the edges are golden-brown. Remove from oven, slice into wedges, and enjoy!
