Braisers are perfect for browning meat or vegetables and then slowly simmering in small amounts of liquid, juices, or wine to create tender results. Braising pans with a lid are multi-purpose so they can be used on the stovetop, in the oven, and taken directly to the table for serving.
Braiser vs Skillet or Fry Pan
You can distinguish between a pan for braising and a fry pan or skillet in a few ways. Traditionally brasiers have higher sides than fry pans and skillets. They have a large flat bottom diameter which can be used for searing and browning. Braisers often have tight-fitting lids to help lock in moisture and allow condensation to drip back into the pan, They often feature side handles for easy maneuverability. Skillets or fry pans usually have lower sides, no lid, and one handle.
Braiser vs Dutch Oven
A braiser is traditionally used for searing and simmering foods in juices or small amounts of added liquids. Dutch ovens are deeper and larger in volume which allows for cooking dishes with more liquid, like soups and stews.
