Rated 5 out of 5 by from Excellent High quality carbon steel pan. Pan seasoned up perfectly and is virtually non-stick. Cooks eggs better than any non-stick pan I have ever had. Heats up quickly and sears steaks as good or better than my cast iron. I really dig this pan. It has a cool factor about it that makes you feel like a chef. I'm not a professional chef but I highly recommend adding one of these to your cooking arsenal.

Super lightweight, this is a beast in the kitchen, heating quickly and doing an amazing job searing, browning, roasting whatever your creation is in the pan. Also the fact that it’s carbon, it can withstand higher heat and can go from stove to oven to table, just like cast iron. Carbon steel is a piece that seems like a select few use, but it’s a piece everyone should use! Love Ballarini and their fry pans!

They heat up quickly and retain that heat for great pan searing and frying. They will last for a very long time if cared for properly. Great for searing that crust on steaks and hamburgers and just about anything else that needs a good sear or fry.

Rated 5 out of 5 by from Old World Cooking If you've never cooked with carbon steel, now is the time. It's much like cast iron - it can take the heat, but it's lighter and easier to manage. Crispy potatoes in duck fat is a family favorite. Pan seared steaks, fish are fabulous. This pan will season over time developing a black patina, that eventually has non-stick properties. Historically, that is when carbon steel pans become valuable. It can easily become and heirloom that is passed down to generations.

Carbon Steel pans are lighter and thinner than cast iron but perform very much the same way. Because they are thinner they respond faster to temperature changes making them ideal for charring and searing meat or making a flash stir fry. They are oven safe up to 600 degrees so no worries when you throw it under the broiler to finish off your masterpiece!

Restaurants use carbon pans because they heat faster, can tolerate high constant heat and simply last longer than stainless steel pans. Over time this pan will create a coating that is similar to non-stick surfaces. Light weight with an extra long handle this pan will make you feel like a pro!

Why maximum oven temperature is 600 degrees when Carbon Steel usually withstands 1200F

We state 600°F. as our Carbon steel, frying pans heat up very quickly and retain the heat extremely well. As you get used to the Pan, it is up to the Consumer.

there are multiple reports of zwilling confirming that this pan actually is aluminized to prevent rust. can you please confirm this? the answer to this question is very confusing: "yes" as in it does contain and then "all carbon steel". Thanks in advance
