The principle of a pressure cooker is simple: as it can be tightly sealed, steam pressure builds up inside enabling you to cook food at high temperatures. The higher cooking temperatures in turn allow the cooking time to be reduced compared to cooking in a normal pot, thereby enhancing the retained flavours and nutritional content of your food.
