The exquisite sharpness and wide, pointed blade of the MIYABI 5000DP GYUTOH knife makes it perfect for preparing meat or fish and for cutting through large vegetables with ease. Each knife is a truly unique item thanks to the beautiful, one-of-a-kind floral Damask pattern running along its 24 cm blade, and the micarta handle makes it easy to handle and effortless to use. The D-shaped handle is well balanced and also fits the hand perfectly due to its multiple layers of linen and synthetic resin, giving you maximum control while cutting. Easy to care for and stable, a black wooden finish, rounded off with stainless steel and vibrant red lines, imbues the handle with a sense of exceptional sophistication. The most important part of any GYUTOH knife is its blade, which is made from 64 layers of two different types of steel, encasing a supremely hard CMV60 steel core. The result of this process is the CRYODUR® blade, an exceptionally sharp blade that retains its edge easily and has been finished using Zwilling's ice hardening technique. This technique gives the blade a hardness of approx. Rockwell 60 whilst keeping it flexible. The sharp Honbazuke honing on either side of the blade produces a particularly precise cutting edge, making the Miyabi GYUTOH the ideal knife for preparing not only traditional Japanese dishes but a wide variety of others as well.
