The main difference between a santoku knife and a conventional kitchen knife is the blade’s hollow ground edge. Thanks to this, fewer ingredients stick to the blade when chopping. Oregano, basil and all kinds of herbs can be quickly and easily transported to the pot on the broad polished blade. Santoku means something along the lines of “three virtues”. These virtues can be equated with the ingredients: meat, vegetables and fish, or with the areas of utility: chopping, cutting and dicing.
