Frying pan material science
Frying pan made of stainless steel 18/0: 18/10 is the general name for nickel-free stainless steels. Such steels essentially consist of iron and chromium. Since this class of stainless steel is ferromagnetic, its use is always essential if the frying pan is to be suitable for induction.
Frying pans made of aluminum and cast aluminum: Aluminum has excellent thermal conductivity and heat storage properties and is therefore ideal for a frying pan. Aluminum pans have good heat conduction and store heat efficiently. Frying pans made of cast aluminum are cast so that more complex shapes can be realized. In addition, the pans are a little more dimensionally stable, whether round or square.
In addition to frying pans made of aluminum and stainless steel, there are other materials copper and cast iron. The latter is ideal for grill pans.
What to look for when buying a frying pan
A frying pan is shallower than a saucepan and has a handle with a longer handle so that it can be easily operated with one hand. This makes it easy to swivel. If you have mastered the technique, you can even turn an omelette or pancake, for example, with a quick swing without having to use a spatula. A detachable handle is useful if you also want to use the frying pan in the oven. As with pots, the bottom of a pan is a decisive purchase criterion.
The bottom of the pan should be slightly curved inwards when cold and expand when heated so that it rests completely on the hob when cooking.
Not every frying pan has to be coated. Two to three pans are sufficient per household. One non-coated frying pan made of stainless steel and one with a non-stick coating. Unfortunately there is no frying pan for everything. When buying, you should use high-quality professional products so that you can achieve the best possible frying result. We recommend using a special crepes pan for pancakes and crepes.
