INGREDIENTS

1 duck
4 apples
100 g raisins
20 g walnuts
Olive oil
150 g honey
1 cinnamon stick
1 star anise
1 tbsp. coriander
1 tbsp. ground red pepper
2 tbsp. cider vinegar
 

HOW TO MAKE IT

  1. Salt the duck and rub with oil. Position on the roaster.
  2. Place in the cold oven and bake for 50 minutes at 410°F (210 °C).
  3. Soak the raisins in water. 
  4. Boil the honey and mix with the spices. Remove from the stovetop and let it stand. Cut the apples into quarters.
  5. After baking for 50 minutes remove the roasting juice from the duck. Place the apple pieces, nuts and the drained raisins in the bottom of the roaster.
  6. After 5 minutes pour the spiced honey over the duck. Add the vinegar to the apples and let the duck caramelize for 10 minutes.
