Cleaning in the dishwasher

Knives with synthetic handles can be put into the dishwasher without reservation (preferably economy cycle at max. 55º C). But please bear in mind that the top-quality blades may be damaged when they hit other cutlery, pots or pans. When loading the dishwasher make sure that the blades do not touch other objects.

Cleaning by hand

For extra care and thus recommended knives should be cleaned by hand. After use a knife should simply be held under warm running water and cleaned with a soft cloth. If necessary add a little washing-up liquid and dry immediately from the back towards the cutting edge.

Removal of scratches from metal handles

Small scratches or dull patches on stainless steel handles can be removed by gently using ZWILLING J.A. HENCKELS own matting fleece (art. no. 30499-000).

Please do not misuse

A knife is not a screwdriver or a can opener. It is entirely unsuitable for these purposes. Misuse may damage the cutting edge.

Use a suitable cutting surface

Even high-quality knives lose some of their sharpness through regular use but unsuitable cutting surfaces such as porcelain or metal will blunt a knife prematurely. A good cutting surface should be easy to clean and sufficiently pliable. Wooden cutting boards possess these characteristics to a higher degree than those made of plastic. They are also more hygienic since wood contains natural acids with self-cleaning properties. Nevertheless, all cutting boards should be thoroughly cleaned immediately after use.

Keep knives safely

Your knives are best kept on either a ZWILLING J.A. HENCKELS knife block or in a case. To ensure sufficient stability only place knife block or cutting board on an even anti-slip surface.

Clean the block regularly with a damp cloth or sponge (non-abrasive) and dry with a tea towel.
